It's the Most Wonderful Time of the Year . . .

...or it will be in 3 days.  Are you ready?  Are you ready for PUMPKIN season?

My sister has a laugh at my expense every year because once September 1st rolls around, it is all-pumpkin-all-the-time around here.  It becomes a slight obsession.

{PS....Starbucks, I'll be at your door Wednesday morning....hoping those Pumpkin Cream Cheese Muffins are in the bakery case.  And if they're not, be prepared for some tears.}

I want you to be prepared, so here is a little pumpkin bread recipe for you. 

Pumpkin Bread
{Just slightly modified from my girl, Paula Deen 's The Lady & Sons Savannah Country Cookbook}

3 and 1/3 c. flour
2 tsp. baking soda
1 and 1/2 tsp. coarse salt
1 tsp. ground cinnamon
1 tsp. freshly ground nutmeg
3 c. sugar
1 c. vegetable oil
4 eggs
1 (15 oz) can pumpkin
2/3 c. water
1/4 c. pumpkin seed kernels

Preheat oven to 350.  Grease and flour 2 loaf pans.

Combine flour, baking soda, salt, cinnamon and nutmeg.  Set aside.

{If you're wondering about what whole nutmeg looks like, this is it.  There are fancy nutmeg graters, but I just use my small handheld grater with the tiny holes.}

Beat the sugar and oil together until combined.  Beat in the eggs and mix, scraping down sides of bowl as needed.  Add pumpkin and blend.  Add the water and blend completely.

Slowly add the flour mixture and beat on low until combined.  Pour into loaf pans.

Roughly chop the pumpkin seed kernels, I like to leave some whole, and sprinkle on top of batter. (I got these in the bulk section of my grocery store.)

Bake for 1 hour, or more, until a toothpick inserted in the middle comes out clean.  Cool in the pans on a cooling rack for 15 minutes.  Remove from pans and let cool completely.

  1. It's so funny that you just posted about pumpkins! I made pumpkin chocolate chip cookies on Wednesday, even though it's not "technically" the season AND I was just thinking to myself, "I wonder what the actual nutmeg spice looks like whole". Seriously, you are reading my mind!

  8. Did you know this year there was a national pumpkin shortage? Apparently the crop last year wasn't the best and they ran out. We looked all over and Libbey had nada. They planted early this year and a bit further south so that they could meet demand.

    Totally weird random pumpkin fact for you today.

    I am glad that i am not the only one that hasn't been able to find pumpkin this year. I love to make pumpkin pie in the summer. It is so yummy and cool out of the fridge. But I haven't been able to find any since last Fall. I told my mom that I will be hoarding it as soon as I see it on the shelves.

  13. Yeah! I am so excited for pumpkin season...I went to Kroger two weeks ago and they told me they had NO pumpkin filling yet. Needless to say I was frustrated, but hopefully September 1st will deliver!

  17. I love pumpkins! We actually planted two pumpkin plants this year and thankfully they each are producing a couple of pumpkins! I should have planted more though because I still can't find canned pumpkin in any stores around here! Where are you finding yours?

  27. HA! I was just thinking how I want to bring pumpkin muffins in to work this week and how I wonder if putting pumpkin seeds on top like Tim Horton's does would be possible w/o burning them. Looks like it is! Seriously, this morning I was thinking all this.

  32. I am totally obsessed with Starbuck's pumpkin cream cheese muffins too. I start salivating like Pavlov's dog just thinking about them! It was torturous 2 years ago when I was pregnant with my son, and had to follow the diet for gestational diabetes; I wanted those muffins even more!! Lol they were the first thing I wanted after I delivered him!

  34. I'm scared pf pumpkins. Very scared.. while I see recipes on blogs etc, I worried about not liking it and really don't want the food to end up in the waste bin. I think the feeling has got to do with the fact that pumpkins are extensively used in Indian spicy food.

  35. This is my hubby's FAVORITE time of the year! He even asks for Pumpkin pie in lieu of birthday cake every year (and his b-day's in the winter). I, too, love pumpkin season (my daughter's named Autumn after all)...so I can't wait to try out this recipe! THanks :) :)

  41. This is the first pumpkin recipe i have seen and that means it's true, it is the most wonderful time of the year!!!
    I once had a beloved pumpkin bread recipe but I lost it. :(
    ALWAYS on the search for my next favorite pumpkin recipe.
    Wish the damn oven wasn't broke or this would be in it, in a New York minute.

  42. I AM SO READY!!! I adore fall with all of my heart!!! If I could find a place where it was fall and spring with a hint of winter, I would be there in a heartbeat! Yum. Time to break out the pumpkin, cinnamon, apples, and of course- Candy corn. :)

  48. ahh i love fall and i adore pumpkin season its so comforting and warm :-) the only thing that i have tried out of pumpkins is pumpkin pie so i think i'll give this recipe a try. i love making quick breads and this one lookst delicious and moist thanks for sharing!

I make pumpkin cupcakes, pumpkin bread, pumpkin pancakes with pumpkin butter, pumpkin roll, pumpkin cookies, pumpkin cheesecake... oh yeah, I am right there with you with your obsession!! I have been getting a grande caramel pumpkin spice frappuccino from Starbucks... 3 to 5 times a week... and their pumpkin muffins with the cream cheese... TO DIE FOR!! If you haven't tried Caramel Pumpkin Spice Frappuccino, you gotta try it!! It is amazing!! :) Happy Baking!!

  58. Hey if you like starbucks pumpkin bread try this recipie it is AMAZING! and the only thing i did different was add a lot of crushed pepitas on top to make it just like the sb version!!
