Carrot Cake Cookies

I won't even go into the "these-cookies-are-good-for-you-because-they-contain-carrots" lecture.
You know that already.

I love, love, love carrot cake.  I'm a chocolate girl through and through, but I think carrot cake wins almost every time.  The carrots ensure its moistness, that little bit of spice makes it intriguing, and cream cheese frosting?  You really can't beat cream cheese frosting.

It all starts with this dough...

....which I could have easily eaten with a spoon without baking one single cookie.

And, then you add the cream cheese frosting...

Pipe on generous squiggles of frosting.  Heck, dunk the entire cookie in frosting...I won't tell.

You've got a little carrot cake in cookie form.  Big mounds of carrot and ginger-laden cookies, flecked with toasted pecans and topped with an orange-flavored cream cheese frosting.

They come together really quickly and will be such a welcome addition to your Easter desserts.

    It's funny, I just wrote a post about my disappointing carrot cake that I bought today haha
    And carrot cakes ARE healthy. Not only do you get your vegetables and nuts, but you get protein from the cheese :)

  5. yes! I think I will be making these, I do have a question for transporting/finding the right darling serving platter purposes, is that frosting going to get hard? thanks!

    1. I stored mine in the fridge and then took them out to come to room temp before serving. Otherwise, the frosting will stay pretty soft. :)

  15. Can you recommend a good way to package and give these? I'd love to make some for Easter gifts, but not sure how to package with the cream cheese icing.

    1. I would try boxing them, rather than treat bags because of the frosting. Also, keep them chilled until you're ready to give them. :)

  18. I love carrot cake (and cookie form is just plain genius), and I live for cream cheese frosting, but those itty bitty carrots on top just melt my heart. Too cute, and I bet they taste delightful!!

  28. These were so good! I'm glad I could finally use my crystallized ginger. I doubled the cookies, since the frosting recipe looked like a lot for only 16 cookies. I didn't do the carrot design, so I ended up throwing out at least a cup of leftover frosting. Thanks for the recipe! :-)
