I'm not an ice cream stylist, nor do I play one on TV.

Let's face it.  I don't take pretty pictures of ice cream.

But, please, PLEASE, I beg you...grab your ice cream maker RIGHT NOW and make this ice cream.

{If you don't own and ice cream maker, we'll see what we can do about that later this week.} ;)

Let me introduce you to Nutella Ice Cream with Toasted Almonds.

{I know, I know, Nutella is made with hazelnuts, not almonds, but my hazelnuts tasted funny.  And you know what?  Almonds are always delicious.}

Nutella Ice Cream with Toasted Almonds

1/2 cup blanched, slivered almonds
2 oz. unsweetened chocolate (I like Ghiradelli)
1/3 cup dutch-process cocoa powder (such as Hershey's Special Dark)
1 & 1/2 cups milk
2 eggs
1 cup sugar
1 cup heavy cream
1 tsp vanilla
1/2 cup Nutella

{This ice cream is made with uncooked eggs, so if you feel uneasy about that or are serving to someone with a compromised immune system, try using pasteurized eggs.}

Preheat oven to 350.  Pour the almonds onto a cookie sheet and bake for 3-5 minutes, until lightly toasted.  Set aside.

Place a heatproof bowl over a pot of simmering (not boiling) water.  Melt the unsweetened chocolate. Gradually add the cocoa; the mixture may clump up in the whisk...that's ok.  Slowly pour in the milk, whisking with the chocolate mixture until combined and smooth.  Remove from heat and let cool several minutes.

Whisk the eggs in a large bowl until light and fluffy, 1-2 minutes.  Add the sugar, a little at a time, whisking constantly.  Once all the sugar has been added, whisk 1 minute more.

Add the cream and vanilla; whisk to combine.

Pour the chocolate mixture into the cream mixture and stir.  Cover and refrigerate a few hours or overnight.

Before transferring to an ice cream maker, remove 1 cup of the mixture into a separate bowl and whisk in the Nutella until smooth. *sigh*

Add this back into the main mixture and stir. Process in an ice cream maker.  About 3 minutes before the freezing cycle is complete, add the toasted almonds.

Once the freezing cycle finishes, transfer to a freezer-safe container and freeze a few hours to firm up.

***Even if you think you don't like Nutella....oh, I know who you are (I'm lookin' at YOU, Amanda), try this ice cream.  Mr. E "doesn't like Nutella" and ate two servings tonight.  The Nutella makes the ice cream super creamy, dreamy and rich.***

Go make it.  I'm serious....GO!

{PS...you need some cake to go with that?  Check out my friend Amy's glorious Chocolate Hazelnut Cake.}

  1. This looks so good! I asked for an ice cream maker for my birthday after reading your blog on the dark chocolate peanut butter ice cream. Adding this one to the list of must try as soon as I get my ice cream maker in 2 weeks. My in-laws own an ice cream shop and I have helped out with some of the photo shoots. The stylist do not even use ice cream for the photos. They use play doh and shortening. For the record your ice cream pictures look great to me!

  3. I agree with Tracy on the pictures ... could almost just reach through the screen and take a scoop! This ice cream sounds fantastic. I have an older ice cream maker, you know the kind you have to pack with ice and rock salt and cover with a towel ... would love to have one of the newer countertop versions.

  15. i take terrible pics of ice cream as well. when i take pictures of it outside, the lighting is good, but it melts away. when i take pictures inside, it doesn't melt as fast, but the lighting is terrible. but i did find that if you put the bowl in the freezer for awhile first, the ice cream will melt slower, and that buys you some time for taking pictures.

I'm one of those people who don't have an ice cream machine yet! (sounds like you were talking right at me in your post) Gosh...I really wish I have one so I can make this ice cream right the way! I LOVE Nutella AND ice cream!

  19. This looks amazing. Sadly I can't eat it because of my bad nut allergy. Don't you people care? I couldn't eat the cupcakes at my cousins birthday party because they had nutella on them. Once I was stuck on the couch unable to move because of the pain because... I ate nutella so could you please post a delicious nut free chocolate ice cream sometime. I think I need it.

  20. For the fact that it has Nutella on it, certainly it's a delicious ice cream. Don't worry about your shots, they are still enticing! Cheers!

  26. My 8 year old is drooling over the computer screen. She requests (doesn't get though) a Nutella sandwich everyday for lunch or an afternoon snack. I think it's time to purchase an ice cream maker.

  33. Sadly I have never tried Nutella before. I walk by it in the store all the time but never think to try any. What does it taste like? I know it's a spread, it kind of looks like chocolate peanut butter. Yeah I know shame on me that I have never tried!!!! :-(

  34. The ice cream looks yummy!! I used to make ice cream ALL THE TIME, sooooooo yummy! My parents had a ice cream maker and I was the one that made ice cream when they requested some. However, I haven't done it in some years and I tell myself that I'm going to every spring/summer, but haven't! (shrugs)

  45. As a Nutella fan who rarely if ever buys it cause we eat the entire jar far too quickly (putting it on EVERYTHING), this ice cream took my breath away. Wow.

    ReplyDelete
  46. I would like the ice cream maker, my favorite ice cream flavor is Rum Raisin Ice Cream.

    ReplyDelete

  49. I need the biscoff spread desperately! I recently moved to Iowa and have no friends and no job. I went searching for the cookies and the spread here after your brownie post and of course they don't have them anywhere! Please send me some so I can make myself treats to drown my lonely sorrows!!

    ReplyDelete
  50. I also "need" the ice cream maker so I can make a batch of biscoff ice cream with the spread you are going to send me!!! ha

    ReplyDelete
  51. OH MY GOODNESS! I will definitely follow your recipe :) Ice cream is one of my favorite dessert. It looks so delicious!

    ReplyDelete
  52. I would love the ice cream maker! Have been a fan of a lot of blogs, especially yours... but many bloggers have been posting up ice cream recipes that I could only dream of making~ hopefully, if I am lucky enough to get this ice cream maker... I would try making rhubarb ice cream? (rhubarb is an ingredient I haven't been courageous enough to tackle...) thank you for the opportunity!

    ReplyDelete
  53. Oh my goodness, nutella ice cream...it sounds heavenly!! I haven't incorporated nutella into any frozen treats yet and I must remedy that immediately!!

    ReplyDelete
  54. This looks heavenly. Absolutely. Heavenly.

    ReplyDelete
  55. I made this over the weekend and it's my new favorite. I would suggest ribboning the nutella throughout the ice cream (don't add it to the base - instead, swirl it into the still-soft chocolate ice cream right after it comes out of the machine)for a more concentrated nutella flavor. And/or up the amount of nutella.
