For years, I bought those little bags of nuts in the baking aisle of the grocery store, brought them home and tossed them in the pantry. Then I read, that nuts can go bad (like rancid bad, not Lindsay Lohan bad). I had no idea.
What works for me? Storing them in the freezer.
Now, I buy nuts in the grocery bulk section. When I come home from the store, it's second nature, I just pop them right in the freezer door. They stay fresh until I need them. No thawing; they're just ready to go.
It works for all nuts...almonds, pecans, hazelnuts...

ReplyDeleteWhat a great idea! Excellent tip to put them in the freezer as soon as you come home from the store!! I usually put them in my pantry and then worry when I find them later about whether or not they are still good.
ReplyDeleteOmgosh, I do the same thing! I used to notice my pecans started tasting funny after they'd been in the cupboard a while (I guess starting to go rancid?) but with the freezer trick, they stay fresh and yummy :)

ReplyDeleteYou may like this helpful hint. I love the taste of fresh ginger, but it goes bad too quickly so I now keep a finger of ginger in the freezer and grate what I need. Hey, if you can keep your nuts in the freezer, I can keep a finger in mine! ;)

ReplyDeleteI do the same thing with nuts . . . but I sometimes (do NOT read that as always!) go a step farther. Since I make homemade granola about once a month, I often divide up the pecans, sunflower seeds, sesame seeds, and flax into small ziplock bags, then put those into a larger ziplock bag (to keep them all together) and throw those in the freezer door. Then when it's time to make granola, I just measure out the oatmeal, grab 1 bag from the freezer, mix up the honey, maple syrup, and applesauce and everything is ready to go.

ReplyDeleteJust a note--if you store your nuts in a freezer attached to a fridge, you can probably chop them straight from the freezer, but if by chance you store them in a heavier duty freezer, you may want to set them out for a few minutes before you try to chop them--especially with a hand chopper. I've broken blades on my hand chopper with frozen pecans. Still the best way to store them, though!

I do the same thing with nuts.
ReplyDeleteMy only real tips are:
1) When I have to chop an onion, if I don't need the whole thing I chop the rest and put them in a ziplock in the freezer. This way there are always chopped onions.
2)If I use canned stock (gasp!) I freeze what I don't use in an icecube tray and then into a ziplock for later!
Vaccum sealed works well... they have those pouches that allows you to seal them in the store. And then drop em in the freezer like you do.
